Cool your rice & pasta first!


If you refrigerate just-cooked rice or pasta overnight and then reheat it before eating, you will dramatically reduce the amount of calories you take in, separate studies have found. With rice, Sri Lankan chemistry students discovered that if they cooked half a cup of rice and refrigerated it for 12 hours, calories in the dish would drop by up to 12 percent. Similarly, a UK study showed that if pasta is completely cooled before being eaten (whether cold or reheated), the blood glucose and insulin spikes in those who eat it will be up to 50 percent lower than if the pasta was just cooked and warm. This happens because the refrigeration of rice or pasta after cooking turns more of starches into a fibre-like resistant starch which digestive enzymes in our stomachs can’t break down and turn into energy.
